CHILI CON QUESO WITH TEQUILA

1 (10 oz) can Rotel tomatoes, drained
2 tbsp tequila
2 tsp ground cumin
1 tsp chili powder and garlic powder
Salt and pepper to taste
1 lb Velveeta, diced
1/2 cup shredded Monterey Jack cheese
1/2 cup green onions, diced
1/4 cup chopped cilantro
1 tomato, seeded and diced
1 jalapeno, seeded and diced
Juice from 1/2 of lime
In large pot over medium heat, stir together Rotel tomatoes, Corona, cumin, chili powder, garlic powder, and salt and pepper to taste. Bring to a boil.
Reduce heat to low and simmer until liquid is reduced. Add Velveeta. Stir until melted. Transfer to a serving bowl. Top with Monterey Jack cheese, green onions, cilantro, diced tomato, jalapeno. Squeeze juice from half a lime over top. Serve immediately with tortilla chips.
