1 tbsp olive oil
2 tomatoes, seeded and diced
2 jalapenos, seeded and diced
1 small yellow onion, diced
Salt and pepper to taste
3 tbsp tequila
2 cup shredded Monterey Jack cheese
1 cup shredded pepper jack cheese
1/4 cup fresh cilantro, chopped

In a large skillet, heat the olive oil over medium high heat. Add the diced tomatoes, minced jalapenos, and diced onion. Season with salt and pepper. Stir often, until softened, about 5 minutes. Pour in the tequila and cook, stirring frequently, until the skillet looks nearly dry, about 2 minutes.

Reduce heat to low. Add the cheeses and cook, stirring constantly, until fully melted, about 30 seconds. Quickly transfer to a serving bowl. Sprinkle with the cilantro and serve immediately, with tortilla chips.
