BACON AND HERB ROASTED TURKEY BREAST

4 slices bacon, diced, cooked, fat drained
3 tbsp butter, softened
3 cloves garlic, minced
1 1/2 tsp fresh rosemary, chopped
1 tsp fresh oregano, chopped
Salt and pepper to taste
4-5 lb turkey breast, skin-on
1 tbsp canola oil
Mix bacon, garlic, butter, and fresh herbs in small bowl. Preheat oven to 375 degrees. Place turkey breast skin side up in roasting pan. Using finger, place chunks of butter underneath skin, between skin and breast, covering entire breast. It will take a little effort but gently pull back skin, careful not to tear. Rub oil all over skin on outside of the bird. Season with salt and pepper.
Place in oven. Roast 55-70 minutes or until the thickest part of the breast reads 165 degrees. Let rest, covered, for 15 minutes. Carve.
