BAKED GERMAN POTATO SALAD

1 cup diced bacon
1 cup chopped celery
1 cup chopped onion
3 tbsp flour
1 tsp salt
1/2 tsp pepper
2/3 cup sugar
2/3 cup cider vinegar
1 1/2 cups water
1/3 cup chopped fresh parsley
2 tsp celery seed
2 QT potatoes, boiled, peeled, sliced 1/8th inch thick
Fry bacon until crisp. Remove with a slotted spoon. Reserve. Should be 1/4 cup fat in pan. Add vegetable oil to make up difference if necessary. Add celery and onion. Cook over medium heat 3 minutes. Add flour, salt and pepper. Cook for 2 minutes longer.
Then add sugar, vinegar and water all at once, stirring with a whisk. Bring to a boil and cook one minute. Add the parsley, celery seed and reserved bacon. Combine and remove from heat.
Heat oven to 375. Place potatoes in an oiled 13X8X2 pan. Pour dressing over. Mix gently so as not to break potatoes. Bake for 45 minutes until middle of casserole bubbles. Serves 10 - 12.
