CHOCOLATE COCONUT SLICES II

6 tbsp butter, softened
1 cup confectioners sugar
1 egg
2 (1 oz) squares unsweetened chocolate melted and cooled
3 tsp vanilla extract
1 1/2 cup flour
1/2 tsp baking soda

Filling
1/3 cup cream cheese, softened
1 tsp vanilla extract
1 cup flaked coconut
1/2 cup finely chopped pecans

In a small bowl, cream butter and confectioners sugar until light and fluffy. Beat in the egg, chocolate and vanilla extract. Combine dry ingredients; gradually add to cream mixture and mix well. Refrigerate 1 hour.

In another bowl, combine first 3 ingredients. Stir in coconut and until blended. Refrigerate for 1 hour.

Shape dough into a 8 1/2 x 6 inch rectangle. Shape filling into a log; place on dough. Wrap dough around filling; sealing the seam. Wrap in plastic wrap and refrigerate 2-3 hours or until firm.

Cut into 1/4 inch slices. Place 2 inches apart on parchment paper-lined baking sheets. Bake at 375 for 10-12 minutes until set. Remove to wire racks.
