1 (10 inch) unbaked pie shell
3 tbsp butter
2 unpeeled medium potatoes, thinly sliced
3 eggs
1 cup evaporated milk
1 tbsp grated onion
1 tsp soy sauce
Dash Tabasco sauce
1 cup shredded sharp cheddar and Monterey jack cheeses

Saute potatoes in butter until tender. Drain on paper towels and cool slightly. Carefully distribute evenly over bottom of pie shell. Spread cheeses over and mix together remaining ingredients and pour over cheeses. Bake at 325 for 30-40 minutes or until set. Let stand 10 minutes before serving.
