FRENCH HERB CHICKEN

3-5 lb roasting chicken
1/2 tsp salt, or to taste
2 clove garlic, minced
2 tsp herbes de provence
1/2 cup butter
Preheat oven to 400. In a roasting pan, place chicken, breast side up and rub with salt, garlic and herbs. Cut pats of butter and place over the chicken and rub inside and around the legs and wings. Place the chicken inside the oven. After 1/2 hour, reduce heat to 375 and continue cooking for an hour or until chicken is done. Baste with drippings and butter until the chicken is crispy on the outside.
