WHITE AND CHOCOLATE CHUNK BUTTERSCOTCH COOKIES

1 cup butter, softened
3/4 cup sugar and packed brown sugar
2 eggs
1 tbsp vanilla extract
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
2 cups chocolate chunk
1 cup white chocolate chips and butterscotch chips
Preheat oven to 350. Beat butter and sugars until light and fluffy. Beat in eggs and vanilla until well combined. Place flour, baking soda and salt into a large mixing bowl; sift of stir to combine. Slowly add dry ingredients to wet ingredients along with all the chocolate/chips. Mix until just combined.
Using a medium cookie scoop, scoop onto a parchment or silpat lined baking sheet placing about 1 1/2 inches apart. Bake for 9-12 minutes or until edges just barely start to turn golden. Remove and let cool on baking sheet for 5 minutes, then transfer to cooling racks to cool completely.
