VEAL WITH PROSCIUTTO - Saltimbocca alla Romana

4 veal cutlets, pounded thin
2 tbsp olive oil and butter
1/8 tsp ground sage
Salt and pepper, to taste
8 thin slices prosciutto
1 lemon, thinly sliced, for garnish

Preheat broiler. In a skillet, saute veal lightly in oil and butter. Place on a baking sheet and dust with seasonings. Top each slice with a slice of prosciutto. Place under broiler, farthest from direct heat, until prosciutto is limp. Garnish with lemon slices and serve.
