APSARAGUS ROLLED IN SMOKED HAM

1 1/2 lbs fresh asparagus, trimmed ends
1 1/2 lbs smoked ham, thinly sliced

Cream Sauce
4 tbsp butter and flour
Salt and pepper, to taste
Pinch nutmeg
1 cup grated parmesan or Asiago, divided

Place trimmed asparagus in about 2 inch of water in a skillet; bring to a boil. Carefully place asparagus in boiling water and cook 1-2 minutes. Immediately remove from heat and rinse with cold water. Drain.

Sauce: Melt butter in a saucepan and whisk in flour, stir 4-5 minutes and slowly add milk, stirring constantly. Simmer and stir until sauce begins to thicken slightly. Season with salt and pepper and add nutmeg. Add 1/2 cup cheese and stir until melted.

When ready to serve, preheat broiler and roll each slice of ham around 4 asparagus spears and place in a lightly greased 13x9 inch baking pan, seam side down. Pour sauce over ham rolls and top with remaining grated cheese. Broil just until the ham rolls are heated through and the cheese is lightly browned. Serves 4
