CHICKEN SKILLET - Easy
Category: Chicken
4 large boneless, skinless chicken breasts
4 oz cream cheese
1 tbsp sherry
3-4 green onions, thinly sliced, including tops
3-4 button mushrooms, thinly sliced
Flour, for coating chicken
Salt, pepper and garlic powder, to taste
Gravy
1 tbsp flour
Salt and pepper, to taste
8 oz chicken stock
Flatten chicken between plastic wrap. Mix next 4 ingredients and spread on each breast. Roll the chicken and fasten with toothpicks. Coat with flour mixed with seasonings. Saute in butter or olive oil and brown on all sides. Remove chicken rolls from skillet and keep warm.
Gravy: Add ingredients to pan drippings and stir until thickened to desired consistency.
Note: Good served over cooked rice or noodles and topped with gravy.
