CHICKEN RISOTTO - Easy
Category: Casseroles - Chicken and Turkey
1/2 lb boneless, skinless chicken breasts, cut into 1/2 inch pieces
1 (14 1/2 oz) can chicken broth
1 cup uncooked regular or long grain rice
1/2 lb asparagus, cut into 1 1/2 inch pieces
1/4 lb fully cooked ham, diced
1/4 tsp dried basil leaves
1/4 cup shredded parmesan cheese
Spray a skillet with cooking spray. Cook chicken for 3-5 minutes, stirring frequently, until lightly browned. Stir in broth; heat to boiling. Stir in rice; reduce heat to low and cover. Simmer for 10 minutes without stirring.
Stir in next 3 ingredients. Cover and simmer without stirring for 8-10 minutes or until chicken is no longer pink in center and rice is tender. Remove from heat and stir in cheese. Serves 4
