CAJUN CREOLE SHRIMP

20 peeled and deveined shrimp, tail removed
1/2 cup diced onion, red, green and yellow bell peppers
2 tbsp minced garlic and oil
1 cup tomato sauce
1/4 cup diced tomato
1 tsp dry thyme
1 tbsp dry basil
Pinch cayenne pepper
1 tsp ground black pepper
1/4 tsp ground white pepper
1 tsp salt
2 tbsp paprika
4 cups cook rice
Combine cayenne, white and black peppers, salt and paprika. Take half seasoning mixture and combine with cleaned shrimp. Work the seasonings into the shrimp, heat a large saute pan over high flame for 3 minutes or until pan is very hot. Add oil. Once oil begins to smoke, add shrimp and saute for 3-4 minutes. Add vegetables and garlic. Saute an additional 3-4 minutes. Incorporate remaining ingredients except rice. Reduce heat to simmer and cook another 3-4 minutes. Serve over rice. Serves 4
