8 slices white bread, crusts removed and cut into circles or shapes
8 oz slices mozzarella cheese
2 (14 oz) cans sliced mushrooms, drained
1 medium onion, thinly sliced into rings
5 eggs
3 cups milk
1 tsp salt and oregano
Pinch garlic powder and pepper
Grated parmesan cheese, for topping
Sliced black olives
Place bread scraps in bottom of a butter 13x9 inch baking pan. Layer half the cheese and tomatoes, all the onions and mushrooms and then cover with remaining cheese. Arrange bread on top. Top with tomatoes. Combine eggs with milk and seasonings. Sprinkle with cheese and olives. Cover and refrigerate overnight. Bake at 325 for 1 to 1 1/2 hours. Allow to rest for 5 minutes to firm. Serves 8
