ALMOND CRUNCH COOKIES I

1 1/2 cups butter
1 cup brown and sugar
3 eggs
1 1/2 tsp baking soda
1 tsp vanilla
1/4 tsp salt
3 1/2 cups flour
1 (7 1/2 oz) pkg almond brickle pieces
Cream together the butter and sugars. Beat in eggs. Add next 3 ingredients. Beat in flour. Stir in almond pieces. Divide dough into four portions. On a lightly floured surface, with lightly floured hands, roll each portion into a log (dough will be soft). Wrap each log on a cookie sheet and chill 4-24 hours.
Remove one log at a time and cut into 1/2 inch slices and place on an ungreased cookie sheet. Flatten cookies slightly with the bottom of a glass dipped in sugar. Bake at 350 for 8-10 minutes. Cool cookies on cookie sheet for 1 minute. Remove and cool on wire rack.
