DOUBLE CHOCOLATE MOCHA WALNUT COOKIES

1 cup flour
6 tbsp natural unsweetened cocoa powder
2 tbsp dark cocoa powder
2 tbsp instant coffee powder, crushed with mortar and pestle
1/2 tsp salt and. baking soda
1/4 cup unsalted butter, room temp
1/4 cup solid vegetable shortening
1/2 cup packed brown sugar
1/2 cup sugar
1 large egg
1/2 tsp vanilla extract
1 1/2 cups chocolate chips
1/2 cup coarsely chopped toasted walnuts
Mix together the flour, both types cocoa powder, coffee powder, salt and baking soda.

Cream the butter, shortening and both sugars in a mixing bowl. Add the egg and vanilla and beat for 30 seconds. Stir in the flour mixture. Stir in the chocolate chips and chopped nuts. Chill dough for an hour or more.

Preheat oven to 350. Line a cookie sheet with parchment paper.

Scoop up generously rounded tbsp of dough and form into 1 3/4 inch balls and space about 3 inches apart on cookie sheet. (Note: You can either flatten them leave in big lumps.) Bake for 12-15 minutes or until set. Let cool on the cookie sheet for 5 minutes on the cookie sheet then transfer to cooling rack. Makes about 18 cookies
