CORN PUDDING

2 large eggs
1 cup half-and-half
3/4 tsp salt
1/8 tsp ground white pepper
Pinch nutmeg
4 1/2 to 5 cups frozen corn kernels, divided
3/4 cup crushed oyster crackers
3 tbsp unsalted butter, melted, divided
1/4 to 1/3 cup shredded sharp cheddar cheese
Paprika
Preheat oven to 350. Grease a casserole dish. In a large bowl, whisk together first 5 ingredients. Mix in corn, 1/2 cup cracker crumbs, 2 tbsp melted butter. Spoon into prepared baking dish and scatter with cheese. Mix together remaining crackers and butter and sprinkle over the cheese. Dust with paprika. Bake for 45-50 minutes or until puffed and golden brown with crusty edges, but a soft center. Serve hot. Serves 6
