SPARKLING POTATOES

1/2 lb bacon, cut into small pieces, browned and drained
1 large onion, thinly sliced
2 clove garlic, minced
8 potatoes, sliced
1 (12 oz) can 7-Up
1/2 lb shredded sharp cheddar cheese
1/4 cup chopped fresh parsley

Preheat oven to 350. To the bacon grease, cook onions and garlic until clear. Layer potatoes, bacon and onion mixture into a large casserole dish, seasoning with salt and pepper between layers. Pour soda over the potatoes mixture and cover. Bake about 40-45 minutes or until potatoes are tender. Just before serving, sprinkle with cheese and parsley, continuing to cook until the cheese is melted.
