ARMENIAN POTATO CASSEROLE

Category: Hash Brown Potatoes/Casseroles

3 cups potatoes, peeled thinly and diced (about 5 potatoes)
3 tbsp tomato paste
1/4 cup water
4 cloves garlic, finely chopped
1 tsp salt
1/2 tsp paprika
1/4 cup olive or herbed oil
1 cups finely chopped parsley

Combine all ingredients in a greased casserole dish and bake at 350 for 45 minutes or until potatoes are tender.
