AMERICAN FRIES

3 medium baking potatoes
2 tbsp oil
1/2 cup chopped onion, green and red bell pepper
1/2 tsp salt
1/4 tsp pepper and garlic powder

Place whole potatoes in a saucepan and cover with water. Bring water to a boil; cover and cook potatoes 10 minutes or until partially cooked. Drain and slice potatoes 1/4 inch thick; do not peel. Heat oil in a large skillet. Add sliced potatoes and onion in skillet and cook 5 minutes or until potatoes are browned, turning potatoes to brown on both sides. Add peppers and spices. Cover and cook 3-5 minutes or until potatoes are done. Serve immediately. Serves 4
