CHICKEN, POTAOTES AND WINE

1 large fryer, cut up
5-6 medium potatoes
1/3 cup olive oil
1 lb Italian sausage
Salt and pepper
4 large clove garlic, minced
2 tsp crushed dried oregano
3 tbsp minced parsley
1/3 cup dry white wine
Clean, wash and pat dry chicken. Cut potatoes into four long quarters; rinse and pat dry. Pour olive oil in a large shallow roasting pan over medium high heat. When oil is hot, arrange chicken and potatoes, rounded side down, in a single layer in the pan. Cook for 5 minutes, shaking pan to prevent sticking. Do not turn. Heat oven to 425.
Add sausage to pan, tucking pieces in between chicken and potatoes to distribute them. Transfer pan to oven and bake for 20 minutes.
Turn potatoes and chicken and bake 20 minutes longer or until ingredients are well browned and crisp and juice runs clear in chicken. Season with salt and pepper.
Meanwhile, stir together remaining ingredients and pour over cook ingredients. Gently shake pan to mix. Bake and additional 5 minutes. Serves 4
