AMARETTO BLACK FOREST CAKE

1 box devils food chocolate cake mix
1 can cherry pie filling
1/2 cup amaretto
3 cups whipping cream
1 tsp vanilla extract
1 envelope unflavored gelatin
1/3 cup cold water
6 tbsp confectioners sugar
1/4 tsp almond extract

Bake cake as directed for round layered cake. Let set to cool and firm up. With a skewer make holes in cakes and pour over with amaretto. Let stand overnight. Prepare cream mixture by combining cream, sugar, vanilla and extract in a large bowl; beat until softly whipped.

Meanwhile, in a saucepan, mix gelatin with cold water and stir over low heat until lukewarm and dissolved. Cool slightly. Beat gelatin mixture into cream and whip until thick. Place one cake layer on serving plate, then put half of cherry filling on top.

Cover with other layer and put remaining filling in center of layer. Frost top and sides with cream mixture, spreading cream around top edge.
