6 (4 oz) beef tenderloin steaks, cut 1 inch thick
1 tsp lemon pepper
1/2 tsp ground cardamom
3 tbsp butter
8 small mushrooms, thinly sliced
2 tbsp diagonally sliced green onions, cut into 1/2 inch pieces
2 tbsp white wine
1 tbsp soy sauce
1 tsp Dijon-style mustard
Combine lemon pepper and ground cardamom; sprinkle over steaks. Heat butter in a heavy frying to bubbling being careful not to burn. Add steaks and saute 7-8 minutes, turning once. Remove steaks to heated platter and keep warm. Add mushrooms and onions to skillet; stir-fry 2-3 minutes. Stir in wine sauce and mustard scraping up brown meat bits; heat thoroughly. Pour sauce over steaks. Serves 6
