BEEF ENCHILADA RICE SKILLET

1/2 lb lean sirloin steak, diced
1 tbsp oil
1/3 cup diced onion
1 garlic clove, minced
1 1/2 - 2 tsp chili powder
1/2 tsp oregano and salt
1 (3 oz) can diced green chilies
1 (8 oz) can Mexican stewed tomatoes in juice
3/4 cup water
1 1/2 cups dry instant rice
2 tsp chopped fresh parsley
Shredded cheddar cheese
Brown beef in oil. Add onion and garlic and saute until tender. Add next 6 ingredients. Bring to a boil, breaking tomatoes into smaller pieces. Stir in rice, cover, and remove from heat. Let stand 5 minutes. Sprinkle with parsley and arrange cheese on top. Cover until read to serve. Serves 4
