BITTERSWEET CHOCOLATE-CAPPUCCINO BARS

1 1/4 cups unsalted butter, softened
2 cups sugar
2 eggs
1/3 cup cappuccino or strong coffee, cold
2 tsp vanilla extract
3 cups flour
3/4 cup unsweetened Dutch-processed cocoa
1 tsp baking soda
1/2 tsp salt
12 oz bittersweet chocolate, coarsely chopped

Heat oven to 350. Grease 13x9 inch pan. In large bowl, beat butter until smooth. Slowly add sugar; beat until fluffy. Add eggs one at a time, beating well after each addition. Add cappuccino and vanilla; beat until well-blended.

In medium bowl, combine flour, cocoa, baking soda and salt. Add to butter mixture; mix just until blended. Stir in chocolate. Spoon and spread in pan. Bake 20 to 25 minutes or until toothpick inserted in center comes out with a few crumbs attached. Cool 20 minutes. Cut into bars. Cool completely before serving. 24 bars
