2 eggs, separated
2/3 cup shortening
1 1/2 cups sugar
2-3 medium bananas, mashed
1 1/2 cups flour
1/2 tsp baking soda
1/4 cup sour milk (1 tsp vinegar and enough milk to make 1/4 cup)
1/2 tsp vanilla extract
1/2 cup chopped walnuts
Whipped cream and sliced bananas, garnish
In a mixing bowl, beat egg whites until soft peaks form; set aside. In a large mixing bowl, cream shortening and sugar. Beat in yolks; mix well. Add bananas. Combine dry ingredients and add to creamed mixture alternately with milk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts. Pour into a greased 13x9 inch baking dish. Bake at 350 for 45-50 minutes. Cool on a wire rack. Garnish.
