CHICKEN FAJITA CASSEROLE

8 chicken breast tenderloins
1 box red beans and rice
1 (4 oz) can sliced olives, drained
2 cups water
1 can Rotel diced tomatoes and chilies
1 cup shredded sharp cheddar cheese or Monterey jack cheese
1 cup crushed tortilla chips

Preheat oven to 350. Place beans and rice in a 13x9 inch baking pan but do not add seasoning packet. Top with olive and chicken.

In a medium bowl, combine water, tomatoes and seasoning packet. Pour over chicken mixture. Cover and bake for 45 minutes. Remove cover and sprinkle with cheese and chips. Bake another 5 minutes or until rice is cooked and chicken is no longer pink. Serves 4
