SQUASH CASSEROLE III

1/4 cup water
2 lb small yellow squash, sliced
1 medium onion, sliced
1 tsp salt
1/2 tsp pepper
3 tbsp melted butter, divided
3 tbsp flour
2 eggs, slightly beaten
1 cup milk
1/2 lb sharp cheddar cheese, grated, divided
4 tbsp plain bread crumbs

Preheat oven to 350. In a saucepan, bring first 4 ingredients to a boil. Cover and simmer until squash is tender, about 20 minutes. Drain and mash. Thoroughly mix in pepper, 1 tbsp butter, flour, eggs and milk. Set aside about 3 tbsp cheese and mix rest into squash. Pour into buttered casserole dish. Bake about 30 minutes, or until a knife inserted comes out clean.

Meanwhile, mix remaining butter, bread crumbs and cheese. Sprinkle over casserole, Return to oven until crumbs slightly brown and cheese melts, about 5-10 minutes. Serves 8
