POTATO SOUFFLE

3 cups potatoes, mashed
8 egg yolks
8-10 egg whites
1 tbsp butter

Blend potatoes and yolks together. Beat egg whites stiff and fold into potato mixture. Brush souffle dish with butter. Spoon mixture into dish and bake at 350 for 25-30 minutes or until done.
