BAKED PORK CHOPS WITH PECANS

1 cup dry bread crumbs
2 tbsp toasted pecans
2 tbsp cornmeal
1 clove garlic, minced
1 1/2 tsp sage
1/4 tsp cayenne pepper
1 tbsp egg white
1 lb pork tenderloin chops; cut into 1/2 inch thick slices
3 tbsp Dijon mustard
1 1/2 tsp water

Preheat oven to 400. Combine first 6 ingredients and salt to taste in a bowl. Whisk in egg white. Place pork between two sheets of wax paper and pound to slightly flatten. Combine mustard and water in a bowl. Dip pork into mixture and then bread crumbs, shaking off excess. Press bread crumbs to hold. Place in a singly layer on a oiled baking pan and bake 40 minutes or coating is browned and crispy.
