BAKED PORK CHOPS WITH PARMESAN-SAGE CRUST

1 1/2 cups bread crumbs
1 cup grated Parmesan cheese
1 tbsp dried rubbed sage
1 tsp grated lemon peel
2 large eggs
1/4 cup flour
4 pork chops, center-cut, bone-in, 3/4 - 1 inch thick and trimmed of fat
1 tbsp olive oil and butter

Preheat oven to 425. Mix together first 4 ingredients in a pie plate. Combine flour with salt and pepper. Whisk egg in a bowl.

Coat chops on bother sides with flour mixture, shaking off excess, dipping into eggs and then into breadcrumb mixture. Melt butter with oil in a skillet and add chops and cook until golden brown on each side.

Transfer skillet with pork to oven. Bake until chops are crisp on outside, about 20 minutes. Transfer to plates and serve. Serves 4.
