POTATO WEDGES

6 medium potatoes
Dash salt and pepper
3 tbsp olive oil
1/2 tsp oregano and thyme
1/3 cup grated parmesan cheese
2 tbsp shredded sharp cheddar cheese

Scrub unpeeled potatoes and cut in half lengthwise and then cut into wedges. Boil wedges for 5 minutes in salted water. Drain and pat dry. Spread in a single layer on a lightly greased baking sheet. Sprinkle oil and seasonings. Bake at 425 for about 15 minutes. Sprinkle with cheeses and bake another 10-12 minutes.
