BUTTERNUT APPLE CASSEROLE

1 butternut squash, peeled, seeded and chunked
3 apples, cored, peeled, sliced
1 tbsp lemon juice
3/4 tsp ground cinnamon
1 tbsp brown sugar
1/2 cup apple juice

Preheat oven to 350. Combine first 4 ingredients. Place mixture in a 1 quart casserole and sprinkle with brown sugar. Pour apple juice over mixture, and cover casserole. Bake 1 hour or until squash is fork tender.
