BAKED APPLES WITH A TWIST

4 granny smith apples, cored and trimmed
2 tbsp dark and golden raisins
1/8 tsp cinnamon
1 tbsp instant oats
2 tbsp butter, chopped into small pieces
2 tbsp sugar
Vanilla yogurt
Preheat oven to 350. Core apples into quarters. Place apples in a square baking dish. Combine remaining ingredients except frozen yogurt. Sprinkle on top of each apple piece. Bake, uncovered, for 20 minutes or until apples are tender. Serve warm with frozen yogurt.
NOTE: Good served with a caramel sauce: In a saucepan, combine 2/3 cup sugar and 3 tbsp cold water. Bring mixture to a boil, stirring constantly. When mixture begins to brown, remove from saucepan from the heat. Add 2 tbsp hot water carefully, as the mixture will splatter. Quickly add 3/4 cup cream, stirring briskly. Return pan to medium-low heat whisk in 1 tbsp butter and 1 tsp vanilla extract. Continue to cook, stirring constantly, until mixture thickens.
