BAKED SOUTHERN YAMS

Category: Sweet Potatoes

4 lb sweet potatoes or yams, peeled and cut into wedges
Salt and pepper, to taste
1/4 cup bourbon
1/2 cup brown sugar
1/2 cup butter, cut into cubes
1 1/2 cup flour
1/4 tsp baking powder and salt
1 cup chopped pecans

Preheat oven to 375. Place potatoes into buttered casserole dish and season with salt and pepper. Drizzle with bourbon. In a bowl, combine the sugar and butter together until smooth. Stir the flour, baking powder and salt into the butter mixture. Mix well and fold in the pecans. Place the mixture on top of the yams spreading evenly and bake for 45-50 minutes or until yams are soft and topping is crispy. Serves 6
