BATTERED FRENCH TOAST

Batter
2 cups baking mix
1 1/3 cup milk
1 egg
2 tbsp vegetable oil plus more for frying
1/2 tsp nutmeg and cinnamon
10 (1 inch) thick slices of French bread
Combine batter ingredients and stir until well combined. In a deep skillet, heat 2 inch of oil until hot but not smoking. Dip each bread slice, both sides, into batter. Place into skillet cook in skillet until golden brown on both sides. Drain on paper towels. Remove to serving plate and serve with syrup and/or confectioners sugar sifted on top.
