BANANA FOSTER FRENCH TOAST

3 eggs
3/4 cup milk
1/2 tsp cinnamon
1/8 tsp nutmeg
2 tbsp sugar
1/2 tbsp vanilla
8 slices French bread
8 tbsp butter
2 tbsp butter and brown sugar
2 bananas, sliced lengthwise and then in half
1/2 cup rum
Banana slices

In a medium bowl, whisk first 6 ingredients. Melt a few tbsp butter in a skillet. Dip bread into egg mixture and fry in a skillet in the butter for about 3 minutes on each side.

In another pan, melt 2 tbsp butter, and brown sugar, stirring until sugar dissolves. Add bananas and saute for 2 minutes. Add rum and very carefully hold a long match to the pan contents to flame. Serve banana slices with some of the bananas and rum sauce on top. Serve with warm maple syrup, if desired.
