HAM MANICOTTI

8 manicotti shells
1/4 cup chopped onion
1/2 lb fresh mushrooms -- sliced
2 tbsp oil
3 cups ground cooked ham
2 tbsp grated Parmesan cheese
1/4 cup chopped green pepper
3 tbsp butter
3 tbsp flour
2 cups milk
1 cup shredded Swiss cheese

Cook shells according to pkg directions, with a little oil added to cooking water. Sauté onions and mushrooms in remaining oil; add ham, and stir in the Parmesan cheese; set aside.

Cook peppers in butter until tender. Blend in flour, add milk and simmer until bubbly. Add cheese. Mix 1/4 cup cheese with ham mixture. Stuff manicotti shells.

Place shells in a greased 13x9 inch casserole dish, and cover with remaining sauce. Sprinkle with paprika. (May be frozen at this point.) Bake 30 minutes.
