CASSEROLE NAPOLI

3/4 lb ground beef
1/2 tsp salt
1/4 medium onions, chopped
1 (8 oz) can tomato sauce
1/2 cup water
1/2 tsp sugar
1/8 tsp oregano and nutmeg
1 (4 oz) pkg noodles
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1/2 cup ricotta or cottage cheese
1/4 cup sour cream
1/8 cup parmesan cheese

Lightly brown meat in skillet. Sprinkle with salt, add onions and cook 3 minutes. Stir in sauce, sugar and spices. Cook noodles until barely tender, drained and add to meat sauce.

Meanwhile, in an oblong casserole dish, layer half the meat mixture, add the spinach in a layer, then meat mixture. Blend ricotta with sour cream, spoon over top of casserole. Sprinkle with parmesan. Bake at 375 for 35 minutes. Serves 4-5
