BBQ CHICKEN CHOPPED SALAD

1 head iceberg lettuce, cut in half
1 head red leaf lettuce, cut in half
2 medium Roma tomatoes, cored and sliced
1 medium cucumber, sliced into about 10 slices
1/4 lb shredded mozzarella cheese
1/2 medium red bell pepper, seeded and sliced
1/2 medium green bell pepper, seeded and sliced
1/2 medium yellow bell pepper, seeded and sliced
1 cup sliced mushrooms
4 chicken breasts, grilled with Sweet Baby Ray’s BBQ sauce and diced
Favorite balsamic vinaigrette
2 pinches Parmesan cheese
Handful of crisp fried onion strings (see note)
Place lettuces, tomatoes, cucumber, mozzarella, bell peppers and mushrooms on large cutting board. Chop to mix together until all ingredients are in 1/4-by-1/4 inch pieces. Place salad mixture in center of 4 large plates. Place chicken breast around the salad. Top salad with balsamic vinaigrette, a pinch of Parmesan and fried onion strings. Makes 4 servings.
Note: Dip thin strings of onion in mixture of flour, salt and pepper and deep-fry about 30 seconds, until golden.
