CAJUN BEEF BURGERS

1 lb ground beef
1/4 tsp pepper
1/8 tsp ground red pepper
1 tsp oil
4 crusty hamburger buns, split and lightly toasted

Cajun Sauce
2 tsp oil
1 large Spanish onion, thinly sliced
1/2 tsp salt and thyme
1 (14 1/2 oz) can Cajun or Mexican-style stewed tomatoes

Sauce: In a saucepan, heat oil. Add onion and salt; cook and stir over low heat 10 minutes. Add tomatoes and thyme; bring to a boil. Reduce heat; simmer until thickens slightly. Shape beef into 4 patties.

Sprinkle both sides with pepper and red pepper; brush lightly with 1 tsp oil. Brown patties in a skillet. Spoon sauce onto both halves of rolls; top with patties and spoon remaining patties over patties. Close the roll tops and serve. Serves 4
