OOEY GOOEY PEANUT BUTTER COOKIES

Dough
1/2 cup unsalted butter
1 cup peanut butter
1/2 cup packed dark brown sugar and sugar
1 tbsp vanilla extract
2 eggs
1/2 tsp baking soda
1/4 tsp baking powder
1/8 tsp salt
1/2 cup miniature semi-sweet chocolate chips
1 1/2 cups chopped peanut butter cups
Filling
3/4 cup peanut butter
1/3 cup packed dark brown sugar
1/2 cup condensed milk
2 tbsp corn syrup
1/4 cup confectioners sugar
6 tbsp unsalted butter
Preheat oven to 350. Stack two baking sheets together and line the top one with parchment paper. In a mixing bow, cream butter, peanut butter and sugar. Fold in eggs and vanilla. Fold in dry ingredients. By hand, fold in chocolate chips and peanut butter cups.
Filling: Combine ingredients in a food processor for 2-3 minutes or until a paste is formed and holds together. Form rounds of dough, about golf ball size, and gently press onto cookie sheet. Deposit a wad of filling, about 1 tbsp, on cookie dough and press lightly. Bake until just set, about 12-15 minutes. Let cookies cool on sheet before removing them to a wire rack to finish cooling.
