SHRIMP MARCHERITA

8 shrimp, shelled removed, deveined
Flour, as needed
1 egg beaten,
Grated parmesan or Romano cheese
2 tbsp olive oil
P inch salt, plus more to taste
Pepper and oregano, to taste
3 slices lemon
2 tbsp butter
Chopped fresh parsley, to taste
1/4 cup white wine

Dredge the shrimp in the flour. Dip in the egg, then in the cheese, coating well on all sides. Heat the olive oil in a saute pan. Add a pinch of salt. Saute the shrimp until brown on both sides. Drain the oil from the pan.

To the same pan, all the lemon slices, salt, pepper, oregano, butter, parsley and white wine. Bring to a simmer, and serve alone or on top of pasta. Serves 1 or 2 appetizer servings.
