SHRIMP SCAMPI

2 lb shrimp, peeled and deveined
1/4 cup olive oil
1/2 cup butter, no substitute
1/3 cup white wine
2 large cloves garlic, crushed
3/4 tsp salt (Seasoning Salt or Garlic salt – my preference)
1/2 tsp freshly ground pepper
3 tbsp chopped fresh parsley
3 tbsp fresh lemon juice, about 1 large lemon

Heat oil over medium low heat in a large skillet. Saute shrimp; add white wine, garlic, salt, and pepper; simmer until liquid is almost evaporated (Do not cover). Sprinkle with parsley and lemon juice. Gently stir and serve with toothpicks as an appetizer.

Optional cooking directions: Sauté shrimp on both sides; cover and simmer for about 10 minutes or until shrimp is tender. Do not over cook.
