CAJUN CHICKEN ROTINI

3/4 lb rotini, cooked al dente
2 tbsp butter
2 boneless, skinless chicken breasts, sliced 1/2 inch thick
3 cloves garlic, minced
1 bunch green onion, chopped
3 tbsp Cajun seasoning
1 tsp ground red, white and peppers
8 oz heavy cream
1 green and red bell pepper, julienned
8 oz mushrooms, quartered
3/4 cup grated parmesan cheese
While pasta is cooking, melt butter in a skillet. Add chicken. Cook, stirring frequently, until browned. Add garlic, onions, seasoning and ground peppers. Add vegetables; stir to combine. Cover and cook for 5 minutes. Uncover; stir in parmesan cheese. Stir in cream and let simmer another 2-3 minutes. Combine sauce with cooked rotini and serve. Serves 4
