STRAWBERRY CREAM DESSERT

1 cup graham cracker crumbs
1 (3 1/2 oz) can flaked coconut
1/4 cup melted butter
2 eggs, separated
1 (3 oz pkg) lemon flavored gelatin
1 cup boiling water
2 tbsp lemon juice
1/4 cup sugar
1 cup heavy cream
2 cups strawberries, sliced
Heat oven to 350. Combine crumbs, 1/2 cup coconut, and the butter in a medium size mixing bowl. . Blend in two egg yolks. Pat mixture into bottom of a 2 quart rectangular baking dish. Bake for 15 minutes. Cool. Brown remaining coconut in the oven. Dissolve the gelatin in boiling water. Add the lemon juice. Chill until almost set. Beat the egg whites until frothy. Add the sugar gradually, beating until stiff peaks form. Set aside. Whip the cream until soft peaks form. Add the thickened gelatin. Beat until mixture is thick and creamy. Fold in the egg whites, then the strawberries. Spread the mixture on the crust. Top with the browned coconut. Refrigerate until firm.
