ALMOND BLOSSOM BUNDT CAKE

1 1/2 cups vegetable oil
1 1/2 cup sugar
3 eggs
3 cup flour
1 1/2 tsp baking soda
1 tsp salt
1/2 tsp cinnamon, ground cloves and nutmeg
1 tsp vanilla extract
3 cups apples, unpeeled and chopped
1/2 cup walnuts or pecans, chopped

Preheat oven to 325. Using solid vegetable shortening, generously grease Bundt pan. Cream oil and sugar. Add eggs, one at a time, beating after each addition. Sift dry ingredients and add to sugar mixture. Add vanilla extract, apples and nuts and fold into batter. Bake for 1 hour and 15 minutes. Cool 20 minutes before removing from pan. Serve warm or cool without icing.
