SALMON SPECIAL

Category: Fish and Seafood

1/4 cup soy sauce and sherry
1 tsp minced garlic and fresh grated ginger
1/4 cup butter, softened
1 medium minced shallot
1 tsp chopped parsley
4 (4-6 oz) salmon fillets or steaks

Combine first 4 ingredients in a resealable bag and place salmon in marinade, turning several times to coat. Refrigerate for 1 hour, turning salmon after 30 minutes.

Cream butter, shallots and parsley; cover and set aside. Grill salmon on oiled hot grill, turning once during cooking, about 6-12 minutes per inch of thickness. Do not overcook. Serve salmon with seasoned butter. Serves 4
