ROSEMARY MASHED POTATOES I

Category: Mashed Potatoes

4 1/2 lbs russet potaotes, peeled and sliced
1 1/2 cups half-and-half
2 tsp finely chopped fresh rosemary
1/2 cup unsalted butter, room temperature

Boil potatoes in salted water until tender; drain. While potatoes are boiling, combine half-and-half and rosemary in a small saucepan and bring to a simmer. Remove from heat; stir into mashed potatoes. Add butter; stir to melt. Season with salt and pepper.
