PEPPERMINT STICK COOKIES

3/4 cup butter
6 tbsp sugar
1 egg, separated
1 tsp vanilla
2 cup flour
1/2 cup crushed peppermint sticks or candies
Chocolate chips
Additional sugar

Preheat oven to 350. Cream butter with sugar. Add egg yolk and vanilla. Blend in flour and crushed candy. Beat egg white until frothy. Roll dough into 1 inch balls. Dip top of each ball into egg white and then into extra sugar. Place on an ungreased cookie sheet, sugar side up. Put a thumbprint on top of each cookie and top with a chocolate chip. Bake about 15 minutes or until set.
